I’m Marco Costeniero, also known as Chef Maruko, after my studies in the culinary school I’ve dedicated my career to the art of Japanese cuisine. Throughout my culinary journey, I have drawn inspiration from the rich traditions of Japan, especially in the realm of culinary tools and techniques.
During my time in Japan, I was captivated by the exceptional equipment available to chefs.
However, I’ve found that these specialized items are often difficult to source outside of Japan.
This realization has fueled my desire to bridge this gap and bring to essence of authentic Japanese culinary tools to chefs worldwide.
In light of this vision, I am thrilled to announce a new collaboration with Smart Sushi Chef.
This vibrant project aims to provide chefs with dedicated tools, exceptional products, self-made objects and unique merchandise that embody the spirit of Japanese culinary craftsmanship.

I'm Miller Ramos a content creator and also known as Pinoy Sushi Master in Italy. In all my jobs I found my true passion in Sushi Japanese Cuisine. So I’ve dedicated my career to the art of Japanese Cuisine.
I admire many Japanese Chef’s, among them I see equipment and tools that are very hard to find here in Europe.

Yes! Kappa Kanpeki is the original invention of Smart Sushi Chef, and is our protected intellectual property. Kappa Kanpeki is only able to be purchased from Smart Sushi Chef, and our licensed retailers. If you see a similar product somewhere else without the “Kappa Kanpeki” trademark, don’t waste your money on a knockoff!

Kappa Kanpeki will work with most dense cylindrical vegetables: Cucumbers, Daikon Radish, Apples, Potatoes, Zucchini, and Eggplant are the most common we use it with, but feel free to test it with others! It is important that whatever you cut is firm and not too soft, otherwise it may be more difficult.

Kappa Kanpeki works best with single bevel Japanese style knives like Usuba or Yanagiba. However, it should work with any sufficiently long and sharp knife! Test out a few of your knives and let us know which works best!

We take a lot of inspiration from Japanese culture here at Smart Sushi Chef, and “Kappa Kanpeki” is no different. Translated from Japanese, it means “Perfect Cucumber”.
