Yanagiba vs Sujihiki: Choosing the Right Service Slicer

The yanagiba and the sujihiki are both long thin slicers and they will both produce sashimi. From a distance they look like the same knife. Up close, in your hand, on the line under pressure, they behave completely differently. One is a traditional single-bevel slicer optimised for the single-direction draw cut on raw fish. The other is a thinner double-bevel cousin that handles fish but is happier doing five other things you also need to do during service.

If you only own one slicer, the answer is not obvious. This guide on yanagiba vs sujihiki walks through what the two knives actually do differently and how to decide which one earns a place on your line first.

What Yanagiba and Sujihiki Actually Are

The yanagiba (literally "willow blade") is a long, narrow, single-bevel slicer with a flat profile, designed for the single-stroke draw cut used to slice raw fish into sashimi or fillet for nigiri. The bevel is asymmetric: the right side of the blade is ground at an angle while the back (left side for a right-handed knife) is nearly flat with a slight hollow grind called urasuki. The cutting action is shear, not split.

The sujihiki (literally "muscle puller") is the Japanese take on the Western slicing knife. Similar length, similar overall silhouette, but double-bevel, symmetric, often thinner than a chef's knife, usually slightly more flexible. It was originally designed for slicing cooked meats. In a sushi kitchen, it has quietly become the workhorse second slicer for everything that is not raw fish.

Same length range. Same overall silhouette. Two completely different geometries underneath.

Edge Geometry: Push vs Split

This is the foundation, so I want to be precise.

A double-bevel knife (sujihiki, gyuto, santoku) has an edge that meets in a V at the centerline. When you push the blade into something, you are wedging that V apart, splitting the material to both sides equally. This is what most people mean when they say "cutting." The blade does not care which side it is on, because it is symmetric.

A single-bevel knife (yanagiba, deba, usuba) is asymmetric. One side is ground at an angle (the kataba). The other side is essentially flat with a slight concave hollow (the urasuki, with a thin polished ridge called the uraoshi around its perimeter). When you draw this blade through fish, the angled side pushes the food off to one side while the flat side stays in contact with the freshly cut surface. The cutting action is closer to peeling than splitting.

Three practical consequences:

The cut surface is glassier. Because the flat side is essentially a guide rail, the freshly exposed surface of the fish is not torn or compressed. It is sheared smoothly. Light reflects off it. This is what gives a properly cut piece of sashimi its characteristic wet sheen.

You only cut on the draw stroke. Pushing back through the cut tears the fish because the asymmetric edge cannot reverse. Every cut is a single long pull from heel to tip. This is why traditional yanagibas are 270 mm or longer - you need a long enough blade to complete the cut in one stroke without sawing.

Fat layers stay intact. Tuna belly (toro), salmon belly (harasu), and any other layered fatty fish has thin connective tissue between fat and muscle. A polished single-bevel slides through these layers without disturbing them. A double-bevel tends to drag, smearing the fat across the cut surface.

The Steering Problem

Here is what nobody tells you when you buy your first yanagiba.

Because the bevel is on one side only, the blade has a directional bias. When you pull a right-handed yanagiba (bevel on the right side, flat on the left) through tuna, the angled side is pushing material to the right. The blade reacts by drifting left. If you stand square to the cutting board and pull straight back, your cut will not be straight. It will curve toward you over the length of the stroke.

This is called blade steering, and every professional sushi chef has to learn to compensate for it. The compensation is in your wrist, not in the knife. You angle the handle very slightly to the right as you draw, which counteracts the leftward steering. The result, when you have it dialed in, is a perfectly straight cut.

This is also why left-handed sushi chefs need a left-handed yanagiba. The bevel direction is reversed, which means the steering bias is reversed. Trying to use a right-handed yanagiba in your left hand is not just awkward, it is geometrically backwards. Reputable Japanese knife makers offer left-handed single-bevels, but they are special order and they cost more.

The sujihiki, being double-bevel, has no steering bias. The cut goes where you point it. This is the first reason it is easier to learn on.

The steering issue is also why you cannot just "use a yanagiba like a slicer" for everything on the line. The first time you try to cut a roll of maki with a yanagiba and the cut comes out angled, you understand. The knife was not built for that motion, and it is telling you so.

When the Sujihiki Wins on the Line

If the yanagiba is the surgeon, the sujihiki is the field medic. Less specialised, but it handles a wider range of tasks under pressure without complaining.

Where the sujihiki quietly outperforms the yanagiba on a working line:

Cutting rolls. Maki, futomaki, uramaki - any cylindrical assembly cut crosswise into rounds. The yanagiba's steering bias makes a crisp 90-degree cut difficult. The sujihiki cuts straight through.

Slicing cooked proteins. Chicken katsu, char siu, smoked fish, terrines. These do not benefit from the polished single-bevel finish, and the harder or more uneven texture risks chipping a yanagiba's delicate edge.

Portioning saku blocks. When you are breaking a long thin saku of tuna into 5 cm working portions before sashimi service, you want speed and a clean cut. The sujihiki's symmetric edge gives you that without the steering compensation.

Anything you need to do in your non-dominant hand. If you are right-handed and need to slice with your left for any reason (cramped station, you have rice on your right hand), a sujihiki works. A right-handed yanagiba does not.

Anything that needs to be portioned quickly and uniformly. Citrus segments, pickled ginger, anything where consistency matters more than the wet-sheen finish.

The cost: the sujihiki will never give you the same surface finish on raw fish that a polished yanagiba does. For a high-end nigiri service, that finish is non-negotiable. For everything else, it is rarely something the diner notices.

This is why most working sushi kitchens have both. Yanagiba for the sashimi and nigiri slicing. Sujihiki for everything else.

Cell Structure and Why Polishing Matters

The single-bevel advantage on raw fish is not magic. It is microns of edge geometry interacting with cellular structure.

Raw fish muscle is organised in myomeres, thin segments of muscle fiber separated by connective tissue called myocommata. When you slice across these structures with a polished single-bevel, the edge passes between fibers without compressing them. Cell membranes stay intact. The fish retains its natural moisture and structural integrity.

A duller or rougher edge tears through these structures. Cell walls rupture. Moisture and free amino acids leak onto the cutting surface. The fish loses both its visual quality (the cut surface goes from glassy to matte) and its flavor (the free glutamates you wanted to taste in the bite are now on your board).

This is why traditional sushi chefs sharpen yanagibas to extremely high grits - 8000 grit and above. A double-bevel kitchen knife is typically finished at 3000 to 4000 grit, which is sharp but not polished. At 8000 grit, the edge has been refined to the point where you can see your reflection in it. This is the level of polish needed to slide between fish cells without disturbing them.

The sujihiki can also be polished to a high grit, but most are finished at 3000 to 4000 because that is what their typical uses require. If you want a sujihiki that can stand in for a yanagiba on raw fish, take it to 8000+ yourself. It will not perform identically, but it will get close.

Blade Length: The Real Working Range

There is a lot of confusion about how long a yanagiba should be. Online forums recommend everything from 240 mm to 360 mm. The real answer depends on what you are cutting.

The minimum useful length is set by the size of the fish you most often portion. You need the blade to clear the fish on the draw stroke in a single motion. If you are slicing 5 cm wide saku blocks, a 240 mm yanagiba is workable. If you are slicing across a 12 cm thick tuna loin, you need 300 mm or more or the cut will require a saw motion which defeats the entire single-stroke premise.

The practical working range for European sushi service:

  • 240-270 mm: home use or very small stations. Works for nigiri-portioned sashimi from pre-cut saku.
  • 270-300 mm: the workhorse range. Handles full-width sashimi cuts from a typical 10-12 cm tuna loin, and is short enough to maneuver in a standard station.
  • 300-330 mm: high-volume omakase counters where breaking down whole loins is part of service. The extra length lets you cut wider portions in one stroke.
  • Above 330 mm: specialty work only. Excellent control, but unwieldy in a tight station.

For most working chefs, 270 mm yanagiba and 270 mm sujihiki is the right starter pair. You can grow into longer lengths once you know what kind of work you are doing most.

Yanagiba vs Sujihiki: The Practical Recommendation

If you can only buy one slicer right now, buy the sujihiki. It handles more of your daily prep, is more forgiving while you build your slicing technique, and gives you a clean cut on raw fish that satisfies 90 percent of service requirements.

If you can buy two, buy a 270 mm sujihiki and a 270 mm yanagiba. Use the sujihiki for everything except sashimi and nigiri slicing. Use the yanagiba only for those two tasks, and keep it polished to 8000 grit or higher. Sharpen the yanagiba weekly, the sujihiki when it stops biting.

If you are training under a chef who expects single-bevel work, buy the yanagiba first regardless. You will be expected to learn the steering compensation, and you cannot learn it on a sujihiki.

What I would not do: buy a long yanagiba (300 mm plus) as a first knife. The length amplifies every mistake while you are learning the technique. Start short, build the wrist, then upgrade.

FAQ: Yanagiba vs Sujihiki

Q: Can I use a sujihiki for sashimi? A: Yes. It will not give the same glassy cut surface as a polished yanagiba, and the fat layers in toro and similar fatty cuts can smear slightly. But for casual service and most home sushi, the sujihiki works well enough that a guest would not notice.

Q: Can I use a yanagiba for cutting rolls? A: Not really. The single-bevel steering bias makes a perpendicular cut across a maki roll very hard to control. You will end up with angled cuts and a frustrating service. Use a sujihiki or a gyuto for rolls.

Q: What size yanagiba should I buy first? A: 270 mm. It handles full-width sashimi cuts from a typical loin, is short enough to maneuver in a normal station, and is the length most working chefs in Europe use day to day.

Q: Do I need a left-handed yanagiba if I'm left-handed? A: Yes. A right-handed yanagiba in your left hand is geometrically backwards - the bevel orientation is wrong, the steering is reversed, and you will fight the knife constantly. Reputable Japanese makers offer left-handed single-bevels. They cost more and ship slower.

Q: How often should I sharpen a yanagiba versus a sujihiki? A: Yanagiba: every week if you are using it daily, more often if you are doing high-volume service. The 8000+ grit polished edge dulls quickly because it is so fine. Sujihiki: every few weeks. The 3000-4000 grit edge is more durable.

Q: What about a takohiki? A: The takohiki is a long single-bevel slicer with a squared-off tip instead of the yanagiba's pointed tip. Functionally the same for sashimi work, more common in Tokyo than the rest of Japan. Either works. The choice is mostly aesthetic.
