They are made in small workshop batches, and demand has outrun every batch so far - most sell out before the crate arrives. Pre-ordering is simply how you make sure one of them is yours.
Traditionally yes - pine is mildly antibacterial and that is part of why it is used. Many chefs line the box with fish preservation paper for easier cleanup and even better moisture control. We sell the paper too, just below.
