Description
A magnolia wood saya sized for 210mm gyuto blades.
A bare edge in a drawer is how good knives die. This saya sheathes a 21cm gyuto in soft, dry magnolia - the traditional saya wood, kind to the edge and naturally moisture-wicking. Friction fit: slide the blade in and it stays put, in a drawer, a knife roll, or a bag on the way to service.
- Fits: 210mm gyuto blades (fits our Gyuto 210 range)
- Material: Unlacquered magnolia wood
- Size: 26cm x 6cm, 40g
- Care: Keep dry, insert the blade only when clean and dry
Make it last.
- Slide the blade in dry - moisture trapped against carbon steel is the wrong kind of patina
- Shim a loose fit with one layer of washi paper around the spine
- Push the bamboo mekugi back if it works loose; whittle a replacement from any clean bamboo if it falls out
- Don't varnish, wax, or oil the inner channel - magnolia needs to breathe
- Don't use the saya for humid-kitchen storage - it's a travel and rest cover, not a knife block
Before you buy.
Will this saya fit my knife?
Saya fit is exact - the wooden channel is hand-fitted to a specific blade length and profile. Check the product listing for the millimetre range. A saya that fits 240mm gyutos will not fit a 270mm yanagiba, and vice versa.
Why is the blade loose / tight when I first try it?
Magnolia wood breathes with humidity. A new saya can be snug for the first few weeks then loosen with use. If it's still loose after a month, wrap one layer of washi paper around the spine before sliding in - it tightens the fit invisibly. Wood that's too tight: sand the channel lightly with 400-grit, or send the saya back for an exchange.
Can I use it for storage in a humid kitchen?
Sayas are draw-and-cut covers, not long-term storage. In a humid kitchen, store the knife on a magnetic rack or in a knife block; use the saya for travel and rest periods only. Wood + moisture + carbon steel = the wrong kind of patina.
Why is my saya wood unfinished?
Magnolia is traditionally left unfinished so it can breathe and absorb any residual oil from the blade. Don't apply wax, varnish, or mineral oil to the inside channel - it'll trap moisture against the blade.
Does the saya pin (mekugi) need maintenance?
The pin is a friction-fit bamboo dowel. Push it back in if it works loose. If it falls out, any clean bamboo skewer can be whittled to replace it. Don't use metal pins - they corrode against the blade.
