The hangiri is where sushi rice becomes shari.
Pulling cooked rice into a hangiri is the moment vinegared rice (sushi-zu) gets folded in, cooled, and seasoned - the step that decides whether the final grain has the gloss and texture of professional shari. Get it wrong here and no technique downstream recovers it.
For three centuries hangiri were made from sawara or hinoki wood. The wide, shallow shape gave the rice high surface area for fast cooling. The wood absorbed excess moisture, holding the grain just right.
It also cracked. Warped. Grew mold in its seams. Required pre-soaking before every use and complete drying after. Wooden hangiri last 2-5 years in a working sushi bar; the good ones cost €400-€800 to replace.

We ship from our EU warehouse in Prague. Free across the EU on orders over €80, 3-5 business days. Outside EU: standard rates apply, customs handled at destination. Tracking on every order.
What's your return policy?
30 days, no questions asked. Ship it back, we refund. Damage from misuse isn't covered - but normal 'this isn't right for me' is. Email office@smartsushichef.com to start.
How do I know the product is authentic?
Every product on the site is sourced directly from the maker or an authorised EU importer. If you ever receive something you suspect is not authentic, email us with photos - we'll refund or replace immediately.
Can I get a chef-business invoice?
Yes. Add your VAT number at checkout and we'll issue a proper EU B2B invoice. For volume orders, contact b2b@smartsushichef.com - we have a separate price list for restaurants.
